These are the words of Michalis Tyrakis, the Cretan chef captivating Milan with his exceptional panettone. He named it MiTo, a name with a dual significance. On one hand, it represents the cities that inspired his meticulous adherence to tradition—Milan and Turin. On the other, it references the Greek mythological thread (mito), symbolizing the journey that brought him from Crete to Milan, where in 2021 he launched his very own panettone, MiTo’21, in the heart of Italy’s panettone empire.

In an interview with Proto Thema, Tyrakis shared his story: “The first December I spent in Italy, I tasted panettone for the first time and became obsessed. Every year, I searched for the best and most renowned versions, made by the masters of the craft. Thirty years later, after working with major companies in the pastry industry, I decided to put my knowledge to use and create my own take—one that remains faithful to Milanese tradition.”

What makes his panettone stand out? “Most people mention its rich, buttery aroma and soft, melt-in-your-mouth texture. But what truly sets it apart is the organic sultana raisins from Crete, along with the carefully selected citrus fruits that enhance its flavor profile.”
